Blackberry + Coconut Panacotta Vegan Tart

Ingredients

  • 1 cup almond meal
  • 1/2 buckwheat (activated preferably)
  • 1/4 cup shredded coconut
  • 10-12 large, juicy dates
  • 1/2 cup almond milk
  • 1 tsp agar powder
  • 1 can coconut milk
  • 1/4 cup maple syrup
  • 1 tsp vanilla extract
  • juice from1 lemon
  • 1 1/2 cups blackberries
  • 1/4 cup maple syrup
  • 1 cup almond milk
  • 1 tsp agar

Preparation

  1. Press blackberries through a fine mesh sieve, to remove seeds. Set aside pulp

  2. Add nut milk and agar to a saucepan over medium heat. Bring to the boil, and simmer for 30 seconds. Turn off heat, then add blackberry pulp and maple syrup. Whisk together then pour over coconut layer. Set in fridge until firm

  3. Serve immediately from fridge with extra berries, passion fruit pulp and Coyo
