Lemon Bar Crust

Ingredients

  • 1 cup cashews (soaked in water overnight)
  • 1/2 cup coconut flour
  • 3 tbsp. honey
  • 2 tbsp. coconut oil

Preparation

  1. In a food processor... combine 1 cup cashews (soaked in water overnight) + 1/2 cup coconut flour + 3 tbsp. honey + 2 tbsp. coconut oil

  2. Press into an 8x8 pan (spray or line it first) and bake at 350F for 8 minutes

  3. Take it out and let it cool while you put together the filling (see recipe for filling in my story)

  4. Pour the filling onto the crust and bake for 20 minutes
