Masoor Almond Namkeen Biscuit

Ingredients

  • Roasted Masoor dal flour 1/2 cup
  • Almond flour 1/4 cup
  • Butter softened 60grams
  • 10 curry leaves chopped up
  • 1 teaspoon jeera
  • Raw sugar or coconut sugar ground 2 teaspoons
  • Salt 1/2 a teaspoons
  • Green Chili paste 1 teaspoon
  • Red chilli flakes as needed
  • Arrowroot starch or cornstarch 3/4 tablespoon

Preparation

  1. In a pan roast masoor dal on low heat stirring often until its nice and aromatic and until the colour is started to get toasty. Once cool grind to a fine flour

  2. Grind almonds in a blender into flour, do not overblend as this will release the oils

  3. In a bowl cream the butter with sugar until fluffy. Add the chilli paste and mix well. Now add all the mixed up dry ingredients and combine using a spatula

  4. Put the dough onto a working surface and roll it into a log. Wrap it with a baking paper and freeze it until use

  5. Let it defrost for a couple of minutes and slice into roundels with a sharp knife to 1/4cm thickness and place them on a lined baking tray

  6. Bake in a170C preheated oven for 12-14 minutes. Let it sit until slightly cool to hold shape

  7. Let cool completely and enjoy this melt in your mouth biscuits or store in an airtight container until needed
