Oreo Cupcakes

Ingredients

  • 300ml soya milk
  • 2 tsp cider vinegar
  • 200g sugar
  • 100ml rapeseed oil
  • 1 tbsp vanilla extract
  • 1/2 tsp salt
  • 240g self raising flour
  • 60g cocoa powder
  • 1/2 tsp bicarbonate of soda

Preparation

  1. First mix the milk and vinegar and set aside

  2. In a large bowl mix the sugar and oil together and then add the milk mixture. Finally add all the other ingredients and mix until smooth. Spoon into cupcake cases and bake at 180C for 15 mins. For these ones I put a spoonful of batter in, then an Oreo and then another spoonful of batter. You can also place an Oreo at the bottom of the cupcake case

  3. For the buttercream I use 500g icing sugar and 150g vegan butter. (Stork baking block is perfect) You may need to add a 1-3 tbsp of soya milk depending on the butter you use. I also added a few drops of vanilla extract and some crushed Oreo crumbs
