Easy 5 Minute Salad

Ingredients

  • for the salad:
  • 2 cups leafy greens (we used spring mix!)
  • 2 cups cherry tomatoes, halved
  • 1/2 cucumber
  • 1/2 can chickpeas
  • honey mustard vinaigrette
  • 1/4 cup olive oil
  • 1 tbs honey (or more if like it a bit sweeter)
  • 1 tsp mustard
  • 1 tsp lemon juice
  • 1 clove garlic, minced (optional)
  • salt + pepper to taste
