Ingredients

  • 500g mixed tomatoes
  • 1 tbsp capers
  • 2 tbsp olive oil
  • 1 tbsp red wine vinegar
  • 2-3 slices of stale sourdough
  • handful of fresh basil

Preparation

  1. Roughly cut the tomatoes into different sizes, pop in a bowl and salt heavily, about 1 tsp heaped

  2. Add the capers, vinegar and olive oil

  3. Break or cut the bread into chunks and mix through

  4. Add pepper to taste and sprinkle over fresh basil

  5. Delicious
