Super Healthy Chilli Ft Cauliflower Rice

Ingredients

  • 1 red onion, chopped
  • 2 peppers, chopped
  • 1 red chilli, chopped
  • 3 garlic cloves, minced
  • 1 tin kidney beans
  • 1 tin chopped tomatoes
  • 250g passata
  • 1 square of dark chocolate
  • 1 tsp of soy sauce
  • 1 tsp salt and pepper, chilli, smoked paprika, oregano, chilli flakes, cumin
  • 1 large cauliflower -

Preparation

  1. Add the onion, peppers and chilli to a large pan with a tbsp of oil, cook for five minutes

  2. Add the garlic and spices to the pan and cook for another minute

  3. Add the chopped tomatoes, passata, kidney beans, chocolate and soy sauce to the pan and cook for 10 minutes

  4. While the chilli is cooking, cut the stalks off the cauliflower and grate each of the heads off

  5. Once the chilli has cooked for 10 minutes, stir in the cauliflower rice and cook for another five minutes
