Blueberry Protein Pancake Bowls
Ingredients
- 1 egg
- 25g blueberries (blended to get 35ml of liquid)
- 50g Greek yogurt (non-fat unflavored)
- 35ml milk (unsweetened almond or any kind)
- 35g all-purpose flour or oat flour
- 25g vanilla whey protein powder
- 1 tsp sweetener (e.g., maple syrup)
- 1/2 tsp baking powder
Topping
- 60g low calorie, no added sugar lemon yogurt
- 3 blueberries
Preparation
Mix all the batter ingredients very well to ensure there are no lumps and achieve a cake batter consistency.
Bake for 30 minutes at 180°C/350°F until the center is cooked.
Add the topping before serving.
Tips
You can store this in the fridge or freezer once baked.
It can be eaten cold.
