Blueberry Protein Pancake Bowls

Ingredients

  • 1 egg
  • 25g blueberries (blended to get 35ml of liquid)
  • 50g Greek yogurt (non-fat unflavored)
  • 35ml milk (unsweetened almond or any kind)
  • 35g all-purpose flour or oat flour
  • 25g vanilla whey protein powder
  • 1 tsp sweetener (e.g., maple syrup)
  • 1/2 tsp baking powder

Topping

  • 60g low calorie, no added sugar lemon yogurt
  • 3 blueberries

Preparation

  1. Mix all the batter ingredients very well to ensure there are no lumps and achieve a cake batter consistency.

  2. Bake for 30 minutes at 180°C/350°F until the center is cooked.

  3. Add the topping before serving.

Tips

  1. You can store this in the fridge or freezer once baked.

  2. It can be eaten cold.
