Lazy Sunday Lunch

Ingredients

  • 1 packet #organic chopped tomatoes
  • 1 tbsp olive oil
  • 1 tspn chopped garlic
  • 1 small chopped white onion
  • 1 tspn oregano
  • 1/2 tspn nutmeg
  • 1/2 tspn paprika or chilli powder if you dare
  • Himalayan salt & black pepper to taste
  • For the lettuce filling
  • 300-500gr paneer cut in strips
  • (Depends how cheesy you like it)
  • 2 packets organic black beans - roughly 600gr
  • Handful coriander
  • Handful spinach
  • 1/2 a medium sized red onion
  • 1/2 inc piece of ginger with skin
  • 1tspn cumin&coriander powder
  • 1tspn turmeric powder
  • 1tspn cinnamon powder
  • 1tspn garam masala
  • 1-3 green ginger chillies if you dare
  • 1tbsp olive oil
  • 1/4 cup water
  • Himalayan salt & black pepper to taste
  • For the wraps
  • baby gem lettuce
  • Toppings (completely optional)
  • grated cheese of your choice or even grated paneer
  • 1tbsp single cream

Preparation

  1. Sauté the garlic and onions in olive oil until they start to brown, add chopped tomatoes and all spices and let simmer for 2 mins

  2. Blend all the ingredients in a @nutribulletuk Except the paneer and the black beans. No chopping required, all straight in! In a pan add the strips of paneer and let brown in a little olive oil. Add the green paste from the #nutribulletuk and the black beans and no need to cook for more than 2mins

  3. Spread half the sauce in a baking tray. Fill a baby gem lettuce with the paneer&black bean filling, lay on the sauce and cover with another baby gem leaf. Pour the other half of the red sauce across the centre of the lettuce as well as single cream and cheese. Grill in the oven for 5mins
