Easy Raw Vegan Salad Variations
Ingredients
Base
- 2 cups of mixed green lettuce
- 2 cups of spinach or romaine lettuce
- 10 oz of mushrooms sliced
- 1 mini sweet onion sliced
- 2 Persian cucumber
- 1/2 avocado sliced
Topping options
- Brad's raw foods chips or kale chips or any dehydrated veggie
- Seaweed chips or nori sheet
- 1/2 cup of berries (raspberries, blueberries, blackberries)
- 1/2 cup sweet plum tomatoes
- NUTS OR SEEDS of choice
Dressing
- 1 tbsp of mustard
- 2 lemons, juiced
- Fresh or dried dill
- Fresh or dried mint
- Paprika or Smoked Paprika
- Cayenne pepper
- Black pepper
Preparation
Wash all vegetables and fruits thoroughly
Slice the mushrooms, onion, cucumber, and avocado as specified
Prepare the toppings by selecting and adding desired items
Mix the dressing ingredients together in a small bowl
Assemble the salad by combining base ingredients, toppings, and dressing in a large bowl
