Quick Beanless Chili with Tasty Side Salad
Ingredients
- ground beef
- 1 diced onion
- 2 garlic cloves
- chili mix or chili powder
- garlic powder
- onion powder
- cumin
- paprika
- 1 adobo pepper
- 1 can diced tomatoes
- chopped kale
- cucumbers
- red onion
- 1 tablespoon Greek yogurt
- mayonnaise
- salt
- pepper
Preparation
Cook ground beef for 2 minutes.
Add 1 diced onion and 2 garlic cloves, then cook for another 4 minutes.
Add the spices (chili mix or chili powder, garlic powder, onion powder, cumin, paprika, and 1 adobo pepper) and 1 can diced tomatoes.
Stir and simmer for 10-15 minutes.
For the salad, combine chopped kale, cucumbers, and red onion with 1 tablespoon Greek yogurt, mayonnaise, salt, and pepper.
