White Bean Salad W/ Rosemary

Ingredients

  • can of cannellini beans rinsed
  • 1/2 cup red onion chopped
  • 1 tbsp fresh rosemary chopped
  • 1 tbsp of good olive oil or grapeseed oil
  • 2 tbsp of red wine vinegar
  • salt & pepper to taste

Preparation

  1. Rinse and drain the cannellini beans

  2. Add the chopped rosemary, red onion, oil, vinegar, salt & pepper and mix well

  3. Let sit at room temp or refrigerated for at least 20 minutes for the flavors to meld

  4. Serve as a side dish or with slices of grilled bread
