Fresh and Colorful San Chow Bow with Mango-Chilli Jello Dressing
Ingredients
- Assorted fresh veggies (such as lettuce, carrots, cucumbers, bell peppers, etc.)
- Marinated tofu (salt, pepper, and ACV)
- Mango purée
- Water
- Brined chillies
- 1 teaspoon agar powder
- Sweetener (according to taste)
- Soy sauce
- Roasted peanuts
Preparation
Prepare the fresh veggies by washing and chopping them into bite-sized pieces.
Marinate the tofu with salt, pepper, and apple cider vinegar (ACV).
In a saucepan, bring water and agar powder to a boil. Continue cooking until the agar melts and is well combined.
Add the mango purée to the saucepan and whisk until the mixture is homogeneous. If desired, use a blender (ensure it can blend hot food) for best results.
Stir in the brined chillies and adjust the sweetness of the dressing according to your taste.
Transfer the mixture to a container and refrigerate until it sets into a jello-like consistency.
Arrange the fresh veggies and marinated tofu on a plate or in a bowl.
Drizzle the mango-chilli jello dressing over the veggies and tofu.
Finish the dish by adding a splash of soy sauce and a sprinkle of roasted peanuts.
