Fresh and Colorful San Chow Bow with Mango-Chilli Jello Dressing

Ingredients

  • Assorted fresh veggies (such as lettuce, carrots, cucumbers, bell peppers, etc.)
  • Marinated tofu (salt, pepper, and ACV)
  • Mango purée
  • Water
  • Brined chillies
  • 1 teaspoon agar powder
  • Sweetener (according to taste)
  • Soy sauce
  • Roasted peanuts

Preparation

  1. Prepare the fresh veggies by washing and chopping them into bite-sized pieces.

  2. Marinate the tofu with salt, pepper, and apple cider vinegar (ACV).

  3. In a saucepan, bring water and agar powder to a boil. Continue cooking until the agar melts and is well combined.

  4. Add the mango purée to the saucepan and whisk until the mixture is homogeneous. If desired, use a blender (ensure it can blend hot food) for best results.

  5. Stir in the brined chillies and adjust the sweetness of the dressing according to your taste.

  6. Transfer the mixture to a container and refrigerate until it sets into a jello-like consistency.

  7. Arrange the fresh veggies and marinated tofu on a plate or in a bowl.

  8. Drizzle the mango-chilli jello dressing over the veggies and tofu.

  9. Finish the dish by adding a splash of soy sauce and a sprinkle of roasted peanuts.
