Gnocchi, Lentil & Green Bean Skillet

Ingredients

  • you've all been asking me to share quick, easy, and healthy meals that can be made primarily with non-perishables (pantry and freezer foods!) i'm up for the challenge, i want to help you all, and i'm doing my best to stay out of the grocery store, stay home, and work with what i have. ??‍?⁣
  • now, if you don't have any type of gnocchi, you could use a pasta (orecchiette) or a white bean as a substitute! also, i topped mine with feta, because i had some leftover from last week, but you can skip that step, it'll still be delish ??⁣
  • gnocchi, lentil & green bean skillet ?⁣
  • 2 bags trader joe's cauliflower gnocchi⁣
  • 12oz marinara sauce⁣
  • 15oz can cooked lentils, rinsed⁣
  • 2 cups chopped green beans⁣

Preparation

  1. Heat an air fryer to 400 degrees

  2. Cook the gnocchi for 12 minutes

  3. Meanwhile, add the marinara sauce, lentils, and green beans to a large skillet and warm up together

  4. Once heated, turn off the heat and wait until gnocchi is done cooking

  5. Add the cooked gnocchi to the skillet and stir to combine

  6. Top with feta, if you have it, otherwise serve as is
