Raspberry Muffin Baked Oats Recipe 🧁❤️
Ingredients
- 1/2 cup porridge oats or oat flour 🥣
- 1/4 cup frozen raspberries + a few extra for topping ❤️
- 1 scoop protein (strawberry shortcake flavor recommended) 💪🏼
- 1 tbsp flax seed meal
- 1 tsp baking powder
- 1/2 tsp baking soda
- Just under a cup of milk 🍼 or water 💦, stirred until thick
Preparation
Preheat the oven to 180°C (356°F).
In a mixing bowl, combine the porridge oats or oat flour, frozen raspberries, protein powder, flax seed meal, baking powder, and baking soda.
Add just under a cup of milk or water to the mixture and stir until the mixture becomes thick and well combined.
Transfer the mixture to a baking dish.
Bake in the preheated oven for 20-25 minutes until the baked oats have a cakey texture and are golden brown on top.
Once baked, remove from the oven and let it cool slightly.
Top with smooth peanut butter for a delicious PB&J-style oats topping.
Garnish with a few extra frozen raspberries.
