Raspberry Muffin Baked Oats Recipe 🧁❤️

Ingredients

  • 1/2 cup porridge oats or oat flour 🥣
  • 1/4 cup frozen raspberries + a few extra for topping ❤️
  • 1 scoop protein (strawberry shortcake flavor recommended) 💪🏼
  • 1 tbsp flax seed meal
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • Just under a cup of milk 🍼 or water 💦, stirred until thick

Preparation

  1. Preheat the oven to 180°C (356°F).

  2. In a mixing bowl, combine the porridge oats or oat flour, frozen raspberries, protein powder, flax seed meal, baking powder, and baking soda.

  3. Add just under a cup of milk or water to the mixture and stir until the mixture becomes thick and well combined.

  4. Transfer the mixture to a baking dish.

  5. Bake in the preheated oven for 20-25 minutes until the baked oats have a cakey texture and are golden brown on top.

  6. Once baked, remove from the oven and let it cool slightly.

  7. Top with smooth peanut butter for a delicious PB&J-style oats topping.

  8. Garnish with a few extra frozen raspberries.
