Chia Seed Pudding with Blueberry Topping
Ingredients
- 2 tablespoons chia seeds
- coconut milk (about 4 times the volume of seeds)
- natural vanilla extract (to taste)
- honey (optional, one spoonful)
Toppings
- homemade blueberry chia jam
- fresh blueberries
Preparation
Soak 2 tablespoons of chia seeds in about 4 times the volume of coconut milk with some natural vanilla extract and a spoonful of optional honey for at least an hour or overnight.
Pour over homemade blueberry chia jam.
Sprinkle with fresh blueberries and enjoy.
