Chia Seed Pudding with Blueberry Topping

Ingredients

  • 2 tablespoons chia seeds
  • coconut milk (about 4 times the volume of seeds)
  • natural vanilla extract (to taste)
  • honey (optional, one spoonful)

Toppings

  • homemade blueberry chia jam
  • fresh blueberries

Preparation

  1. Soak 2 tablespoons of chia seeds in about 4 times the volume of coconut milk with some natural vanilla extract and a spoonful of optional honey for at least an hour or overnight.

  2. Pour over homemade blueberry chia jam.

  3. Sprinkle with fresh blueberries and enjoy.
