Healthy Chia Seed Pudding with Blueberries

Ingredients

  • 3 tbsp chia seeds
  • 1 cup soy milk
  • 1/4 cup fresh blueberries
  • 1 tsp blackberry powder
  • 1 tsp vanilla extract
  • bananas for garnish
  • 2 tsp homemade cashew cream

Preparation

  1. Soak chia seeds in soy milk for an hour or overnight.

  2. Mix blackberry powder, vanilla extract, and cashew cream just before serving for better flavor; this is optional.

  3. Add homemade chia seeds berry compote for extra flavor, if desired.
