Easy Summer Strawberry Mousse

Ingredients

  • 2 cups chopped strawberries
  • 1/2 plus 1 tablespoon whipping cream (dairy or plant-based)
  • 1/4 cup granulated sugar
  • 1/3 cup cornstarch
  • 1 teaspoon vanilla extract (optional)

Preparation

  1. In a blender or food processor, blend strawberries with sugar and cornstarch until smooth

  2. Pour the mixture into a saucepan and cook over medium heat, whisking constantly, until thickened and creamy—about 3 to 5 minutes. Remove from heat and stir in vanilla, if using

  3. Let cool for 10–15 minutes, then press plastic wrap directly onto the surface and refrigerate for 1 hour

  4. In a mixing bowl, whip the cream until stiff peaks form

  5. Gently fold the chilled strawberry mixture into the whipped cream until fully combined

  6. Spoon or pipe into serving glasses. Enjoy as-is or use to fill and frost cakes and desserts
