Easy Summer Strawberry Mousse
Ingredients
- 2 cups chopped strawberries
- 1/2 plus 1 tablespoon whipping cream (dairy or plant-based)
- 1/4 cup granulated sugar
- 1/3 cup cornstarch
- 1 teaspoon vanilla extract (optional)
Preparation
In a blender or food processor, blend strawberries with sugar and cornstarch until smooth
Pour the mixture into a saucepan and cook over medium heat, whisking constantly, until thickened and creamy—about 3 to 5 minutes. Remove from heat and stir in vanilla, if using
Let cool for 10–15 minutes, then press plastic wrap directly onto the surface and refrigerate for 1 hour
In a mixing bowl, whip the cream until stiff peaks form
Gently fold the chilled strawberry mixture into the whipped cream until fully combined
Spoon or pipe into serving glasses. Enjoy as-is or use to fill and frost cakes and desserts
