Blender Orange Cake with Fresh Syrup
Ingredients
- 1 medium orange with peel
- 3 eggs
- 1 cup oil or 2 tablespoons butter
- 1 cup sugar
- 1 1/2 cups all-purpose flour
- 1/2 cup cornstarch
- 1 tablespoon baking powder
Syrup
- juice of 1 medium orange
- 2 tablespoons sugar
Preparation
Preheat the oven to 350Β°F (180Β°C)
Grease and flour a round baking pan
Cut the orange into 4 pieces and remove any visible seeds
In a blender, combine the orange, eggs, oil, and sugar; blend until smooth
In a bowl, whisk together the flour, cornstarch, and baking powder
Gradually add the blender mixture to the dry ingredients, stirring until smooth
Pour the batter into the prepared pan
Bake for 35 minutes
Let the cake cool in the pan for 5 minutes
Syrup
Combine orange juice and sugar in a small saucepan
Bring to a boil over medium heat, then remove from heat
Pour the syrup over the warm cake
