Banana Protein Pancakes with Walnuts

Ingredients

  • 1 large banana, mashed
  • 1/4 cup of walnuts
  • 1 tsp. vanilla extract
  • 1 cup non-dairy milk (almond, cashew, pea milk)
  • 1 cup gluten-free all purpose flour (on here I used buckwheat flour)
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/4 tsp. cinnamon
  • 1 Tbsp. coconut oil
  • 30g of vanilla plant based protein

Topping

  • Maple syrup
  • Fresh berries

Preparation

  1. Place all the ingredients in blender.

  2. Heat pan to medium heat and lightly oil with coconut spray.

  3. Add a quarter cup of the batter into the pan. Flip once bubbles have formed and popped.

  4. Top with fresh fruits and maple syrup.
