Brown Butter Zucchini Banana Bread

Ingredients

  • 1/2 cup salted butter
  • 1 medium zucchini
  • 2 very ripe bananas
  • 1/2 cup dark brown sugar
  • 1/2 cup granulated sugar
  • 2 eggs
  • 1/3 cup plain Greek yogurt
  • 2 teaspoons vanilla bean paste or extract
  • 2 cups all-purpose flour
  • 1 teaspoon cinnamon
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 ripe banana (optional)

Preparation

  1. Preheat oven to 350°F and line a loaf pan with parchment paper or baking spray. Set aside.

  2. Add butter to a pan over medium heat. As it melts, it will start to foam. Stir consistently with a spatula to keep the milk solids from sticking and burning. Continue stirring until the butter turns golden to light brown, then remove from heat and set aside.

  3. Grate the zucchini and set aside.

  4. In a large bowl, mash the bananas. Then add the brown butter and whisk to combine. Add the eggs and whisk again. Then add the Greek yogurt and vanilla bean paste, and whisk well.

  5. Next, stir in the zucchini.

  6. Finally, add the flour, cinnamon, baking powder, and baking soda. Stir until just combined.

  7. Pour the mixture into the loaf pan and top with the halved banana.

  8. Bake for 65-70 minutes, or until a toothpick inserted in the center comes out clean. Start checking around 40 minutes and if it is browning too much, cover with foil to prevent burning.

  9. Cool for 15 minutes, slice, and enjoy.
