Chocolate Muffin Baked Oatmeal
Ingredients
- 80 g oat flour
- 20 g flax flour or grounded flaxseeds
- 100 ml milk of choice/water
- 1 mashed banana (around 100 g)
- A pinch of cinnamon
- A pinch of baking powder
- Chocolate pieces (75% chocolate)
Preparation
In a bowl, combine oat flour, flax flour (or grounded flaxseeds), milk (or water), mashed banana, cinnamon, and baking powder.
Mix all the ingredients together, ensuring they are well combined.
Preheat the oven to 180°C (350°F).
Scoop the batter into a small oven-proof ramekin.
Place chocolate pieces on top of the batter.
Bake the mixture in the preheated oven for approximately 20 minutes or until it is fully cooked.
Once baked, the oatmeal will have a muffin-like texture.
Optionally, enjoy the oatmeal while it's still warm to enjoy the melty chocolate.
