Crispy Chickpea Avocado Toast

Ingredients

  • 2 cups chickpeas (cooked, rinsed, patted dried)
  • 3 tbsp avocado oil
  • 1 tsp garlic powder
  • 2 tsp smoked paprika
  • 1 tbsp lemon juice
  • 2 tsp coconut sugar
  • 1 tbsp ground cumin seed
  • 2 tsp Celtic salt
  • 1 tsp black pepper

Avocado spread

  • half an avocado
  • 2 tbsp vegan mayonnaise
  • 4-6 leaves fresh basil, finely chopped

Preparation

  1. Pre-heat oven to 200°C.

  2. Open chickpea cans, rinse and pat dry with a paper towel.

  3. Add all ingredients into a bowl and mix well.

  4. Lay parchment paper on a cooking sheet and bake for 30 minutes.

  5. Mash together half an avocado, 2 tablespoons of vegan mayonnaise, and 4-6 finely chopped fresh basil leaves to make the avocado spread.

  6. Assemble the toast as desired.
