Crispy Chickpea Avocado Toast
Ingredients
- 2 cups chickpeas (cooked, rinsed, patted dried)
- 3 tbsp avocado oil
- 1 tsp garlic powder
- 2 tsp smoked paprika
- 1 tbsp lemon juice
- 2 tsp coconut sugar
- 1 tbsp ground cumin seed
- 2 tsp Celtic salt
- 1 tsp black pepper
Avocado spread
- half an avocado
- 2 tbsp vegan mayonnaise
- 4-6 leaves fresh basil, finely chopped
Preparation
Pre-heat oven to 200°C.
Open chickpea cans, rinse and pat dry with a paper towel.
Add all ingredients into a bowl and mix well.
Lay parchment paper on a cooking sheet and bake for 30 minutes.
Mash together half an avocado, 2 tablespoons of vegan mayonnaise, and 4-6 finely chopped fresh basil leaves to make the avocado spread.
Assemble the toast as desired.
