Easy Vegan Taco Pancakes

Ingredients

  • 1 banana, mashed (~90g)
  • 1 tsp apple cider vinegar
  • 80g chickpea flour
  • 55g rice flour
  • 1/3 tsp baking powder
  • 1/4 tsp baking soda
  • 150ml soy milk
  • Sweetener of choice

Preparation

  1. Mix all ingredients together.

  2. Adjust the amount of plant milk depending on the flour used.

  3. Bake the pancakes in a well-coated pan with a little bit of oil if desired.

  4. Serve with fillings and toppings of your choice.

  5. Heat a pan over medium heat before cooking

  6. Pour batter into the pan to form pancakes and cook until done
