Fluffy Egg Breakfast Quesadillas 🍳

Ingredients

  • 1 tortilla wrap
  • 2 eggs, beaten
  • 1/4 cup diced peppers
  • 1/2 a jalapeño, diced
  • 1/3 cup cheese
  • 1/2 an avocado
  • Option: crumbled bacon

Preparation

  1. Heat oil in a skillet.

  2. Add beaten eggs and cook until set, sprinkle with a little cheese and place tortilla on top.

  3. Move the tortilla a little to check the egg isn't sticking, then using a spatula flip it.

  4. Add toppings to half and sprinkle with cheese.

  5. Fold and press down, cook for another 2 minutes until the bottom is crispy.

  6. Remove and cut into 3 pieces.
