Fluffy Egg Breakfast Quesadillas 🍳
Ingredients
- 1 tortilla wrap
- 2 eggs, beaten
- 1/4 cup diced peppers
- 1/2 a jalapeño, diced
- 1/3 cup cheese
- 1/2 an avocado
- Option: crumbled bacon
Preparation
Heat oil in a skillet.
Add beaten eggs and cook until set, sprinkle with a little cheese and place tortilla on top.
Move the tortilla a little to check the egg isn't sticking, then using a spatula flip it.
Add toppings to half and sprinkle with cheese.
Fold and press down, cook for another 2 minutes until the bottom is crispy.
Remove and cut into 3 pieces.
