Fluffy Sweet Potato Rolls with Kefir
Ingredients
- 1 large sweet potato
- 4-4 1/2 cups bread flour
- 1 packet (2 1/4 tsp) rapid yeast
- 1 tbsp granulated sugar
- 1 tsp kosher salt
- 1/2 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 5 tbsp unsalted butter, divided
- 3/4 cup Lifeway Plain Full-Fat Kefir
- 3 large eggs, divided (room temperature)
- Sesame seeds for topping
Preparation
Preheat oven to 400°F. Wash and dry the sweet potato, prick its surface with a fork, place it on a foil-lined baking sheet, and roast for 50 minutes to 1 hour until tender.
Cool the sweet potato until safe to handle. Peel off the skin, add the flesh to a food processor, blend until smooth, and measure out 1 cup of puree; set aside.
In a large bowl, whisk together 4 cups flour, yeast, salt, sugar, and spices.
Measure kefir in a liquid measuring cup. Add 3 tablespoons butter to the kefir and microwave for 30-35 seconds until the milk is lukewarm and the butter is almost melted.
Add the mixture to a smaller mixing bowl and whisk in the sweet potato puree and 2 eggs until combined.
Add the wet mixture to the dry ingredients and combine using a wooden spoon or spatula.
When the dough is too thick to stir, use hands to knead it until smooth. The dough should spring back when touched and not be sticky. If sticky, add 2 tablespoons flour at a time until it is not.
Cover the dough and let it rest for 10 minutes.
Grease a 9x13-inch baking dish with butter. Transfer the dough to a lightly floured surface, portion it into 15 pieces, shape each piece into a dough ball, and arrange them in the baking dish. Cover and let rest for 30 minutes.
Preheat oven to 375°F. Make an egg wash by lightly beating together 1 egg and 1 teaspoon water. Brush the top of each roll with the egg wash and sprinkle with sesame seeds.
Bake for 20-25 minutes until golden brown.
Melt the remaining 2 tablespoons butter. While the rolls are still warm, brush their tops with the melted butter.
