Gluten-Free Carrot Cake with Cream Cheese Frosting
Ingredients
- 1 package Namaste Foods spiced cake mix
- 1 cup grated carrots
- 16 ounces cream cheese
- 1/2 cup butter at room temperature
- 4 1/2 cups confectioners' sugar
- 1 tablespoon heavy cream
- 1 1/3 teaspoons vanilla
- a pinch of salt
Preparation
Prepare the spiced cake mix according to the package directions, adding 1 cup of grated carrots to the batter
Bake the cake as directed on the package
Allow the cake to cool completely before frosting
For the frosting, in a bowl, beat the cream cheese and butter together on medium-high speed until smooth.
Add the confectioners’ sugar, heavy cream, vanilla extract, and a pinch of salt. Beat on low speed for 30 seconds, then increase to high speed and beat for 3 minutes until completely combined and creamy.
Frost the cooled cake with the cream cheese frosting
