Gluten-Free Carrot Cake with Cream Cheese Frosting

Ingredients

  • 1 package Namaste Foods spiced cake mix
  • 1 cup grated carrots
  • 16 ounces cream cheese
  • 1/2 cup butter at room temperature
  • 4 1/2 cups confectioners' sugar
  • 1 tablespoon heavy cream
  • 1 1/3 teaspoons vanilla
  • a pinch of salt

Preparation

  1. Prepare the spiced cake mix according to the package directions, adding 1 cup of grated carrots to the batter

  2. Bake the cake as directed on the package

  3. Allow the cake to cool completely before frosting

  4. For the frosting, in a bowl, beat the cream cheese and butter together on medium-high speed until smooth.

  5. Add the confectioners’ sugar, heavy cream, vanilla extract, and a pinch of salt. Beat on low speed for 30 seconds, then increase to high speed and beat for 3 minutes until completely combined and creamy.

  6. Frost the cooled cake with the cream cheese frosting
