Easy Homemade Carrot Cake with Cream Cheese Icing
Ingredients
Cake
- 1 cup sugar
- 1/2 cup vegetable oil
- 1.5 cups grated carrots
- Large handful chopped walnuts
- small handful halved walnuts
- Large handful raisins
- 2 eggs
- 1 cup all purpose flour
- 1 tsp baking soda
- 1 tsp baking powder
- 1 teaspoon cinnamon
- Pinch of salt
Icing
- 1 cup cream cheese
- 2 tbsp butter
- 1 tsp vanilla essence
- 1 cup sugar
Preparation
Preheat the oven to 180 degrees Celsius. Line a loaf tin with baking paper or grease it. Set aside.
In a bowl, whisk together the flour, baking soda, baking powder, cinnamon, and salt.
In a separate bowl, mix the sugar and oil, then add the grated carrots. Beat in the eggs, then stir in the chopped walnuts, followed by the flour mixture until well combined.
Pour the mixture into the baking tin and bake for 45-50 minutes, until a knife inserted comes out clean.
Remove from the oven and let it cool.
Meanwhile, beat together the cream cheese, butter, and vanilla essence. Add the icing sugar and beat until fluffy and smooth.
Once the cake has cooled, spread the icing thickly on top and decorate with walnuts.
Slice and serve.
Tips
The cake tastes better after a few days if stored properly, so it's fine if you don't eat it all at once.
