Healthy Oatmeal Banana Muffins

Ingredients

  • 1 1/2 cups wholemeal flour
  • 1 teaspoon baking powder
  • 1 tablespoon cinnamon
  • 1 teaspoon ground ginger
  • 1/2 cup rolled oats
  • 1/3 cup avocado oil
  • 1/3 cup maple syrup
  • 1/3 cup soy milk
  • 2 mashed bananas
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon baking soda

Preparation

  1. Preheat the oven to 180°C and grease a 12-small or 6-large muffin baking tin.

  2. In a small bowl, combine the wholemeal flour, baking powder, cinnamon, ginger, and rolled oats.

  3. In a separate bowl, combine the avocado oil, maple syrup, and soy milk. Stir to mix.

  4. Mix in the mashed bananas and stir to combine.

  5. Add the apple cider vinegar and baking soda to the mixture and mix until well combined. If the batter is too thick, add more avocado oil.

  6. Spoon the batter into the prepared muffin cups, filling them halfway.

  7. Bake for 25 minutes or until golden.

  8. Remove from the oven and let the muffins cool in the baking tin for 5 minutes.

  9. Let the muffins cool completely before serving. Enjoy!
