Lemon Mint Matcha Overnight Oat Pudding

Ingredients

  • 1 cup water
  • 1/2 cup lemon juice
  • zest of lemon
  • 2 tsp matcha
  • 2 handfuls fresh mint
  • 4 dates
  • 1/2 cup oats
  • 2 Tbsp chia seeds
  • 2 Tbsp shredded coconut
  • 2 Tbsp cashew butter or tahini for nut free

Preparation

  1. Simply blend all ingredients until very smooth.

  2. Pour in 2 jars and refrigerate overnight.

  3. Next morning, open the lid and it’s ready.
