Lemon Mint Matcha Overnight Oat Pudding
Ingredients
- 1 cup water
- 1/2 cup lemon juice
- zest of lemon
- 2 tsp matcha
- 2 handfuls fresh mint
- 4 dates
- 1/2 cup oats
- 2 Tbsp chia seeds
- 2 Tbsp shredded coconut
- 2 Tbsp cashew butter or tahini for nut free
Preparation
Simply blend all ingredients until very smooth.
Pour in 2 jars and refrigerate overnight.
Next morning, open the lid and it’s ready.
