Lemon Raspberry Overnight Oats

Ingredients

  • 1 cup old fashioned rolled oats
  • 1 tbsp lemon zest
  • 1/4 tsp kosher salt
  • 1 1/2 cup nonfat plain Lifeway Kefir
  • 1/4 cup maple syrup
  • 1 tsp vanilla extract
  • 1 cup raspberries

Toppings

  • yogurt
  • crushed raspberries
  • lemon zest

Preparation

  1. Add in half of the oats, lemon zest, and kosher salt into one jar with a lid and mix to combine. Repeat with second jar.

  2. Pour in half of the Lifeway Kefir, maple syrup, and vanilla into one jar and stir well to combine. Repeat with second jar.

  3. Divide raspberries between the two jars and stir to combine. Seal both jars and refrigerate overnight.

  4. When ready to eat, top with yogurt, crushed raspberries, and lemon zest. Enjoy
