Creamy Matcha Oatmeal with Fruit and Cacao Nibs

Ingredients

  • 2/3 cup or 60g rolled oats
  • 2 tbsp vegan peanut protein powder (optional, can replace with 1 tbsp peanut butter)
  • 1 tbsp ground flaxseeds or chia seeds
  • 1 cup plant milk
  • 2 tbsp plant-based yogurt
  • 1 tsp matcha

Preparation

  1. Stir all the ingredients except for the matcha powder together and cook them in a small saucepan on high heat, then reduce to a simmer after about a minute.

  2. When the oatmeal starts to thicken, remove it from the stove, stir in the matcha, cover with a lid, and let it sit for about 5 minutes.

  3. Pour the porridge into a bowl and serve with your favorite fruits and other toppings.
