Creamy Matcha Oatmeal with Fruit and Cacao Nibs
Ingredients
- 2/3 cup or 60g rolled oats
- 2 tbsp vegan peanut protein powder (optional, can replace with 1 tbsp peanut butter)
- 1 tbsp ground flaxseeds or chia seeds
- 1 cup plant milk
- 2 tbsp plant-based yogurt
- 1 tsp matcha
Preparation
Stir all the ingredients except for the matcha powder together and cook them in a small saucepan on high heat, then reduce to a simmer after about a minute.
When the oatmeal starts to thicken, remove it from the stove, stir in the matcha, cover with a lid, and let it sit for about 5 minutes.
Pour the porridge into a bowl and serve with your favorite fruits and other toppings.
