Creamy Cinnamon and Stewed Apple Porridge

Ingredients

  • 50g green apple, thinly sliced
  • 1/2 tsp. ground cinnamon
  • 1 cup (250ml) boiling filtered water
  • 35g rolled oats
  • 150ml unsweetened almond milk
  • 25g vanilla vegan protein powder
  • 8g raw unsalted walnuts, roughly chopped

Spiced maple topping

  • 12g hulled tahini
  • 5ml maple syrup
  • 1/4 tsp. ground nutmeg
  • 5ml filtered warm water

Preparation

  1. Combine ingredients for Spiced Maple Topping and set aside.

  2. Add apple and cinnamon to a saucepan and toss well to coat.

  3. Place on the stove and add in half of the filtered water. Bring to the boil and cook for 4-5 minutes, or until apple is almost cooked.

  4. Add in oats, almond milk and remaining water and bring to the boil. Cook for 3-4 minutes.

  5. Add in protein powder and stir through until thickened.

  6. Pour the porridge into a bowl and drizzle with Spiced Maple Topping. Sprinkle with walnuts to serve.
