Easy Brownie Banana Bread
Ingredients
- 1 flax egg
- 1 banana mashed (about 120 g)
- 2 tbsp maple syrup (42 g)
- 2 tbsp milk (30 g - I use almond from @ulu_hye)
- 1/2 tsp vanilla extract
- 1/2 cup gluten free flour (60 g)
- 1/2 cup almond flour (56 g)
- 1/4 cup cocoa powder sifted (24 g)
- 1 tsp baking powder
- Pinch salt
- Sprinkle of 1/2 tbsp chocolate chips (7 g)
- Raspberries (optional)
Preparation
Preheat oven to 350F and grease your pan.
Mix all ingredients except chocolate and raspberries. If you’re using non-gluten-free flour, combine wet and dry ingredients separately, then combine the two but avoid overmixing.
Transfer to loaf pan and sprinkle chocolate. If using raspberries, add them.
Bake 40 minutes until knife inserted comes out clean.
Cool completely and slice.
Notes
For substitution, use another 1/2 cup flour and add 1 tbsp oil for richness, but do not overmix.

This recipe makes 8 slices in a junior loaf pan; double for a regular loaf.
