Eggless Masala French Toast

Ingredients

  • 4 slices of medium-thick white toast bread (use gluten-free bread for a gluten-free option)
  • 300g block of silken tofu
  • 2 tbsp gram flour (besan or chickpea flour)
  • 1 tbsp plain flour (use gluten-free flour for a gluten-free option)
  • 1/2 cup plant milk of choice (almond milk used)
  • 1/2 red onion, finely chopped
  • 1/2 tomato, finely chopped
  • fresh coriander, finely chopped
  • 1 garlic clove, crushed
  • 1 green chilli, finely chopped (use milder if desired)
  • 3/4 tsp smoked paprika powder
  • 1/2 tsp cumin seeds
  • 1/2 tsp cumin powder
  • 2/3 tsp coriander powder
  • pinch of turmeric powder
  • 1/2 tsp Himalayan salt
  • 1/4 tsp ground black pepper

Garnish

  • fresh coriander, chopped
  • red chilli flakes

Preparation

  1. Remove silken tofu from packaging and blend it with almond milk at low speed in a blender. Transfer the mixture to a flat soup bowl.

  2. Finely chop tomato, red onion, green chilli, and fresh coriander.

  3. Add plain flour, gram flour, and all spices to the egg mixture.

  4. Whisk everything until smooth and well combined. The mixture should have a thin pancake batter consistency.

  5. Add the chopped red onion, tomato, green chilli, and fresh coriander to the french toast batter. Mix well.

  6. Take one slice of bread and dip it in the batter, ensuring it is well coated on both sides.

  7. Fry on a non-stick pan for 2-3 minutes. Add a bit of oil if desired. Flip and fry the other side for 2-3 more minutes until golden and crispy. Transfer to a plate.

  8. Garnish with fresh chopped coriander and red chilli flakes.

  9. Serve with ketchup, green chutney, and a cup of masala chai.
