Festive Gingerbread Protein Pancakes
Ingredients
- 60g plain flour
- 30g myvegan salted caramel soy isolate protein powder or vegan alternative
- 5g chia seeds
- 180ml unsweetened almond milk
- 1/4 tsp baking powder
- Some nutmeg, cinnamon and ginger
- Some crushed up gingerbread men
Preparation
In a bowl, combine all dry ingredients including flour, protein powder, chia seeds, baking powder, nutmeg, cinnamon, ginger, and crushed gingerbread men.
Add almond milk and mix until a smooth batter forms.
Heat a non-stick skillet over medium heat.
Pour batter into the skillet to form pancakes and cook until bubbles appear on the surface, then flip and cook until golden brown.
Serve immediately.

Top with whipped cream, gingerbread men, and sugar-free syrup.
