Golden Crispy Buttermilk Waffles
Ingredients
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- Salt
- 3 large eggs, separated
- 2 teaspoons granulated sugar
- 1 2/3 cups buttermilk
- 3 tablespoons butter, melted, or vegetable oil
- Nonstick cooking spray
Preparation
In a large bowl, whisk together flour, baking powder, baking soda and 1/2 teaspoon salt
In a medium bowl, whisk together egg yolks, sugar, buttermilk and butter until blended then pour over flour mixture and stir just until smooth
In another medium bowl, using electric mixer, beat egg whites with a pinch of salt until stiff peaks form
Fold one-third of the egg whites into batter until blended, then gently fold in remaining egg whites just until no white streaks are visible
Spray waffle maker with cooking spray, ladle in batter and cook according to manufacturer’s directions then transfer to rack on baking sheet and keep warm in preheated oven and repeat with remaining batter, spraying waffle maker as necessary between waffles
