Peanut Butter Pretzel Brownies

Ingredients

  • 1/2 cup cold coffee
  • 1/2 cup coconut oil, melted
  • 1/2 tsp vanilla extract or powder
  • 2/3 cup coconut sugar
  • 1/2 tsp baking powder
  • 1/3 cup raw cacao powder
  • 1 cup flour
  • 6 large hard pretzels
  • 1/4 cup mini nondairy chocolate chips

Preparation

  1. Preheat oven to 350 degrees

  2. Line 9x9 baking pan with parchment paper or oil well

  3. Combine coffee, melted coconut oil, vanilla and coconut sugar and mix well

  4. Add baking powder, cacao powder and flour and mix again for about a minute

  5. Pour batter into prepared baking pan and spread evenly

  6. Drizzle runny peanut butter over the batter

  7. Press pretzels into top of batter gently, and sprinkle mini chips and extra pretzel salt from your bag of pretzels on top

  8. Bake for 20 minutes and cool completely before cutting

  9. You can use any hard pretzels for this, and smaller one make more sense for clean cutting, but I couldn’t resist these large Bavarian style beauties ? Please let me know if you try these - I love hearing your reviews and I’m always looking to improve
