Tikka Rice with Crispy Rice Flour Cauli
Ingredients
- For crispy cauliflower
- Cauliflower: 1 cut in bite sized bits
- Oil for frying
- For coating
- Rice flour: 1/2 C
- Cornflour: 2 T
- Salt: 1 t
- Chilly powder: 1t
- For marinade
- Coconut yogurt: 3 T
- Turmeric: 1t
- Cumin powder: 1t
- Coriander powder: 2t
- Garam masala: 1/2 T
- Chilly powder: 2 t
- Ginger powder: 1T
- Amchur powder: 1 t
- Smoked paprika: 1/2 T
- Salt: 2 t
- For Tikka masala rice
- Onions: 1 thinly sliced
- Tomatoes: 4 roughly chopped
- Coconut yogurt: 1 C
- Turmeric: 1 t
- Coriander powder: 1 T
- Tikka masala spice: 1 T
- Basmati rice: 1 C
- Water: upto 1 1/2 C
- Oil: 1 T
- Salt to taste
Preparation
For crispy cauliflower
Marinate cauliflower in listed ingredients for 30 minutes
Coat with a mixture of listed coating ingredients
Fry till crispy
For Tikka masala rice
Heat oil in a pan and add onions and a pinch of salt. Cook till onions are translucent
Add tomatoes and spices and cook till soft
Add coconut yogurt and blend to form a soupy mixture
Let mixture completely cool, then add rice and 1 C water
Cover pan with lid and cook rice on low flame till done
