Ingredients

  • 1 cup pistachios, lightly toasted
  • 1/3 cup water
  • 1 tbsp sherry vinegar
  • 1 tsp kosher salt
  • 3 tbsp EVOO

Garnish

  • hot chili oil
  • scallions
  • toasted buckwheat seeds
