Ginger Sesame Seitan with Quinoa and Veggies
Ingredients
Sauce
- 1/4 cup coconut aminos or soy sauce
- 1/4 cup rice vinegar
- 1/4 cup maple syrup
- 1/4 cup hoisin sauce
- 2 tablespoons grated ginger
- 2 tablespoons corn starch
- 1/2 cup water
- 2 teaspoons sesame oil
Seitan
- 1 pound seitan strips
- 1/4 cup corn starch for coating
- 2-4 tablespoons avocado oil
- Sesame seeds for garnish
Base
- Quinoa
- Pineapple
- Mixed vegetables
Preparation
Sauce
Mix all sauce ingredients together in a saucepan.
Heat while whisking until thick.
Turn off heat and set aside.
Seitan
Toss seitan strips in corn starch until coated.
Heat avocado oil in a saute pan.
Cook seitan, flipping until browned on all sides.
Pour sauce over seitan and cook until no loose sauce remains, about 5 minutes.
Top with sesame seeds.
Base and assembly
Cook quinoa according to package instructions.
Prepare pineapple and vegetables as desired.
Serve seitan mixture over the bed of quinoa, pineapple, and vegetables.
