Microwaved Pani Puri Street Snack

Ingredients

Puri discs

  • 30 Pani Puri Discs

Filling

  • 1 large potato, peeled and boiled
  • 1 tin chickpeas
  • 1/2 red onion
  • 1 tsp chaat masala
  • Handful fresh coriander leaves

Pani water

  • Large handful of fresh coriander (approx 50g)
  • Large handful of fresh mint leaves (10g)
  • 1 tsp tamarind (optional)
  • 1 teaspoon chaat masala
  • 1 teaspoon black salt
  • 1-2cm chunk fresh ginger
  • 4 tablespoons lemon juice
  • Water to top up to 500ml

Preparation

  1. Blend the pani water ingredients until smooth and refrigerate if making in advance.

  2. Finely chop the cooked potato and red onion, then mix with the chickpeas, chaat masala, and add chopped fresh coriander if desired.

  3. Spread the puri discs out 10 at a time on a microwaveable plate without overlapping.

  4. Microwave on high for 30 seconds, then add more time in 5-10 second intervals until fully puffed, adjusting based on microwave wattage.

  5. Allow the puris to cool and set before tapping a small hole in the top and filling with the potato mixture.

  6. Serve immediately with the pani water.

Tips

  1. Heat the empty plate in the microwave first for even better puffing results.
