Stuffed Onion Rings with Aloo Sabjee

Ingredients

Stuffing

  • paneer (small piece)
  • coriander leaves (chopped)
  • capsicum (finely chopped)
  • mint leaves
  • aloo sabjee (leftover)
  • roasted crushed peanuts
  • salt
  • 2 teaspoons red chili powder

Batter

  • 1 spoon besan (chickpea flour)
  • salt
  • red chili powder
  • water

Coating

  • bread crumbs
  • coriander leaves (chopped)
  • garlic cloves (finely chopped)

Preparation

  1. Grate a small piece of paneer.

  2. Add chopped coriander leaves and finely chopped capsicum.

  3. Add mint leaves.

  4. Add leftover aloo sabjee.

  5. Add roasted crushed peanuts.

  6. Mash everything together.

  7. Add salt and 2 teaspoons red chili powder and mix well to make the stuffing ready.

  8. In a separate bowl, mix 1 spoon besan, salt, red chili powder, and water to create a thin slurry without lumps.

  9. Stuff a small portion of the mixture into onion rings.

  10. In another bowl, mix bread crumbs with chopped coriander leaves and finely chopped garlic cloves.

  11. Apply the slurry to the stuffed onion rings and then coat with the bread crumb mixture.

  12. Shallow fry on low flame until golden brown on each side.

  13. Garnish with mint leaves and serve.

Tips

  1. Warm the pan before frying to ensure even cooking.

  2. Do not overcrowd the pan to make flipping easier.

  3. Fry for about 5 minutes per side until golden brown for tender onions.
