Peanut Butter Banana Oatmeal Bars
Ingredients
- 2 ripe bananas, mashed
- 1/2 cup peanut butter
- 1 tablespoon vanilla
- 2 flax eggs (combine 2 tablespoons ground flax seed and 6 tablespoons warm water and let sit for 15 minutes)
- 2.5 cups gluten-free rolled oats
- 1/2 teaspoon baking powder
- 1 teaspoon cinnamon
- 1/4 cup coconut sugar
- 1/4 teaspoon salt, to taste
- 1 tablespoon hemp seeds
- 1 tablespoon cacao nibs
- 1/4 cup chopped pecans
- 1/4 cup pumpkin seeds
- Blueberries or dark chocolate chips (optional)
- Gluten-free granola (optional, for topping)
Preparation
Preheat oven to 350 degrees. Line an 8x8 glass baking sheet with parchment paper, lightly spray with coconut oil, and set aside.
In a large bowl, use a hand mixer or spoon to combine the first four wet ingredients. Add in all remaining ingredients except blueberries, chocolate chips, and granola.
Once combined, stir in blueberries or chocolate chips.
Transfer to the baking dish and press down with your hands or a rubber spatula.
Sprinkle with granola.
Bake for 18-22 minutes. Let cool and refrigerate for at least 1 hour before slicing into squares.
Eat cold or warmed up. If you warm them up, eat with a spoon as they will be softer.
