Raw Raspberry Peanut Butter Cakes
Ingredients
Base
- 1 cup walnuts
- 1/2 cup blanched almonds
- 10 dates
- 4 tablespoons rice malt or maple syrup
Peanut butter layer
- 1 cup peanut butter
- 1/4 cup maple syrup, more if needed
Raspberry layer
- 2 cups raspberries
- 1 tablespoon chia seeds
Chocolate topping
- dark chocolate, amount as desired
Preparation
Mix the base ingredients together in a food processor, press into a mold and freeze for 1 hour.
Mix the peanut butter layer ingredients together in a food processor and press into the frozen mold, then freeze for another hour.
Heat the raspberries for 5 minutes, remove from heat, add the chia seeds and then add to the frozen mold before freezing again.
Melt the dark chocolate and pour it over the frozen mold.
