Steamed Glutinous Rice Parcels with Filling

Ingredients

  • 1 kg white glutinous rice flour
  • 3 grated coconuts (large size)
  • 2 teaspoons salt
  • 3 tablespoons granulated sugar
  • Banana leaves
  • Toothpicks

Filling

  • Brown sugar, as needed, shaved

Preparation

  1. Mix the glutinous rice flour, grated coconut, salt, and sugar until well combined with no lumps. Do not knead; just stir lightly to avoid hardness.

  2. Take banana leaves, place 3 full tablespoons of dough, add the shaved brown sugar filling, and cover with another 3 full tablespoons of dough, adjusting size as desired.

  3. Wrap the mixture securely with toothpicks without pressing the dough, then steam for 25-30 minutes until cooked.

  4. Remove from steamer, remove toothpicks, trim the banana leaves with scissors, and serve.

Tips

  1. Ensure the grated coconut is whitened for a whiter result, as skipping this may lead to a less white appearance.

  2. The key to a soft texture is to avoid over-mixing or pressing the dough during preparation.
