Chicken Satay with Peanut Sauce
Ingredients
- 1 whole chicken (boned, cut into cubes, washed, and drained)
- 2 large onions (for grinding)
- 1 garlic bulb (for grinding)
- 2 inches ginger (for grinding)
- 4 lemongrass stalks (for grinding)
- 2 cups sugar (for marinade)
- 2 teaspoons salt (for marinade)
- 4 teaspoons turmeric (for marinade)
- 3 tablespoons cumin (for marinade)
Peanut sauce
- Handful of dried chilies (for grinding)
- 2 large onions (for grinding)
- 2 inches ginger (for grinding)
- 1 lemongrass stalk (bruised)
- 2 cups ground peanuts
- 2 pieces palm sugar
- 1/2 cup sugar
- Salt to taste
- Water as needed
- Tamarind slices
Preparation
Grind the onions, garlic, ginger, and lemongrass for the satay marinade.
In a large bowl, combine the chicken cubes, ground mixture, sugar, salt, turmeric, and cumin.
Mix well and marinate the chicken.
After marinating, thread the chicken onto skewers.
Grill the skewered chicken, basting with a mixture of excess marinade and oil as needed.
Peanut sauce
Grind the dried chilies, onions, and ginger for the sauce.
Heat oil in a pan.
Sauté the ground mixture and bruised lemongrass until the oil separates.
Add the ground peanuts and stir well.
Add water, stir, and bring to a boil over low heat.
Add palm sugar, sugar, salt, and tamarind slices.
Cook until the sauce thickens and adjust seasoning as needed.
