Healthy Vegan Birthday Rice Crispy Treats

Ingredients

  • 1/2 cup solid refined coconut oil
  • 20 ounces Dandies marshmallows
  • 1 teaspoon vanilla
  • a pinch of salt
  • 8 cups organic brown rice crisps
  • sprinkles (optional)

Preparation

  1. Line a 9x13 baking dish with nonstick parchment paper and use binder clips to hold down the sides

  2. Heat a large pot to medium heat and add 1/2 cup solid refined coconut oil

  3. When the oil starts to melt, add 20 ounces Dandies marshmallows and stir with a wooden spoon until they melt

  4. Once melted, remove the pot from the heat and quickly stir in 1 teaspoon vanilla and a pinch of salt

  5. Immediately add 8 cups organic brown rice crisps and stir until combined

  6. Spread the mixture into the lined dish and pat into an even layer, then top with sprinkles if using

  7. Allow to cool for at least 4 hours before slicing and serving
