Four Cups Coconut Barfi

Ingredients

  • 2 cups coconut
  • 1 cup milk
  • 1 cup sugar
  • 1 tablespoon ghee

Preparation

  1. Grate fresh coconut and set it aside

  2. Warm 1 cup milk and keep it ready

  3. In a kadai, add milk, then add sugar once it dissolves, and add the coconut

  4. Cook on a low flame, stirring occasionally

  5. When the mixture thickens, add 1 tablespoon of ghee

  6. Stir continuously to prevent sticking to the pan

  7. Turn off the heat and spread the mixture in a pan to cool and solidify, then cut into desired shapes once cooled

Notes

  1. For vegans, substitute milk with water

  2. Coconuts are high in fat and contain protein, minerals like manganese, copper, iron, and selenium, which support bone health, metabolism, and cellular protection
