Vegan Street Corn Nachos

Ingredients

  • 10 Tortilla chips
  • 2 Cups Vegan cheese shreds
  • 1 Cup Corn, fresh or canned

Chili lime sauce

  • 1/2 Cup Vegan mayo
  • Juice of 1 Lime
  • 1 Teaspoon Chili Lime Salt
  • 2 Cloves Garlic

Toppings

  • 1/4 Cup Cilantro
  • Extra Chili Lime Salt

Preparation

  1. Preheat oven to 400 degrees

  2. Place half the tortilla chips on a sheet pan, then sprinkle half the vegan cheese shreds on top, then half the corn

  3. Place the remaining tortilla chips on top, then sprinkle the remaining vegan cheese shreds and corn

  4. Bake for 6-8 minutes or until the vegan cheese is melted and the corn is hot

  5. While the chips are baking, whisk together vegan mayo, lime juice, chili lime salt, and finely minced garlic in a small bowl and set aside

  6. Drizzle the chili lime mayo over the baked nachos, sprinkle with cilantro, and serve immediately
